Depending on what city you reside in, as a food truck owner, you may be required to prepare your food in a commissary. As regulations in the food truck industry increase across the nation, it is most likely a requirement that you rent space and utilize a commissary.
A food truck commissary is a location designated by the local health department as a space that is safe to prepare food. Commissaries are also known as commercial kitchens. They will have everything you need to prep and cook your food. This includes refrigerators, designated cooking and prepping areas, commercial sinks for proper tool sanitization, electricity, water and propane refills, and grey water disposal.
Depending on the commissary, there can be extra add-ons such as maintenance, mailing address for inventory, and ice refills. To get a list of all local commissaries, reach out to your local health department.
Commissaries usually start at $1,000 per month and go up from there. Research and tour different facilities to determine which price point/offerings are best for your business.
If you want to go an alternate route, you can negotiate deals with approved locations that are in full compliance. These include churches, small restaurants, schools, bars with a kitchen, nursing homes, and community centers. Check with your local health department to confirm they are in compliance and will meet the needs of a commissary.

Networking is a key factor that comes up for most trucks as it helps them meet other owners, get gigs, and sometimes the commissary will help get trucks gigs or host local events.
